Basic Pancakes
From 'Joy of Cooking'
Tried and true, these pancakes are right for every day and any topping.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking power
- 3 tablespoons sugar
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 3 tablespoons unsalted butter, melted
- 2 large eggs
- 1/2 teaspoon vanilla (optional)
Directions

1. Whisk together the dry ingredients in a large bowl.
2. Whisk together the wet ingredients in another bowl.
3. Pour the wet ingredients and gently whisk them together, mixing just until combined.
